EMV- is a Standard/Technology that is used to carryout a payment transaction. Primary Account Number which is a sensitive data is sent by the card to complete the transaction.

Tokenisation – Is basically replacing sensitive data with non-sensitive equivalent

EMVco, the organisation responsible for EMV standards released a new standard which enables to complete a EMV transaction using tokenisation. Here PAN(Sensitive data) is converted in to a token (non-sensitive data). This significantly reduces the risk of the secret data of the card user getting leaked.
